Pepperoni, Beef, and Cheese Filling


  1. Sauté the onions in the olive oil, about 2 minutes Add the beef, chopping as you cook.
  2. Add pepperoni, breaking it up as it cooks together. Add  tomato paste, basil and oregano.
  3. Cook for 15-20 minutes, stirring constantly.
  4. The mixture should be slightly moist Add the cheese and set aside to cool. Tip:  It’s easier to work with if both mixtures  are cold in the process of forming rice balls.


  • 4 oz beef, ground
  • 4 cup Peak Fresh Produce® Basil, chopped
  • 1 Peak Fresh Produce® Onion(s), diced
  • 1/4 tsp Peak Fresh Produce® Oregano, minced
  • 1/4 cup Roma® Oil, Olive
  • 1/4 cup Roma® Cheese, Parmesan
  • 4 oz Roma® Pepperoni, chopped
  • 1/4 cup Roma® Cheese, Romano
  • 1 tbsp Roma® Tomato Paste
