Pumpkin Butter Poached Sirloin
Directions
- Place butter in sauté pan, turn on medium heat to melt. Whip in pumpkin and add salt. Add sirloin filet and spoon mixture over top. Turn after 2 minutes. Continue to spoon until desired temperature.
- Place mashed in center of plate, top with sirloin. Place veggies around the mashed potatoes and garnish with fresh thyme.

- 6 oz. Braveheart® Black Angus Beef Steak(s), Sirloin Fillet
- 1/2 tsp. chipotle base
- 6 oz. Nature's Best Dairy® Butter
- 1 each Peak Fresh Produce® Thyme, Fresh, sprig
- 4 oz. potato(es), mashed
- 3 oz. pumpkin, canned solid pack
- pinch salt, truffle
- 4 oz. vegetable blend
