Pumpkin Butter Poached Sirloin


  1. Place butter in sauté pan, turn on medium heat to melt. Whip in pumpkin and add salt. Add sirloin filet and spoon mixture over top. Turn after 2 minutes. Continue to spoon until desired temperature.
  2. Place mashed in center of plate, top with sirloin. Place veggies around the mashed potatoes and garnish with fresh thyme.


  • 6 oz. Braveheart® Black Angus Beef Steak(s), Sirloin Fillet
  • 1/2 tsp. chipotle base
  • 6 oz. Nature's Best Dairy® Butter
  • 1 each Peak Fresh Produce® Thyme, Fresh, sprig
  • 4 oz. potato(es), mashed
  • 3 oz. pumpkin, canned solid pack
  • pinch salt, truffle
  • 4 oz. vegetable blend
