Pumpkin N’ Brew Soup
Directions
- Sweat the onions, celery, red pepper, garlic, ginger, and cumin in butter.
- Deglaze with beer and reduce to a syrup.
- Add puree and stir until hot.
- Add stock and blend in a blender until desired consistency is reached. Return to stove on medium heat.
- Mound in cheddar cheese and heavy cream.
- Adjust seasoning, garnish, and serve.
Ingredients
- 2 oz. unsalted butter
- 1 ea. yellow onion, minced
- 4 stalks celery, small dice
- 2 ea. Red pepper, small dice
- 6 garlic, clove(s), minced
- 1 tbsp ginger, minced
- 1/2 tsp cumin, toasted
- 12 oz. beer, dark
- 2 cups Libby's Pumpkin Puree
- 4 cups chicken stock
- 4 cups cheese, cheddar
- 1 cup cream, heavy
- bacon, lardons, large dice, for garnish
- pumpkin seeds, toasted, for garnish
- salt and pepper, to taste
