Pumpkin Seafood Sauce
Directions
- While your pasta is cooking, grill your prawn and clams with salt and pepper 1/2 way. Set aside.
- In a sauté pan, add butter and shallots until translucent and then add your garlic and chilis. Deglaze the pan with white wine and seafood stock and add in your seafood.
- Season and cook until clams are fully open, add in your pasta, pumpkin puree, and orange juice. Cook until sauce thickens and add in butter.
- Plate and serve. Garnish with cilantro, clams, and prawn.
Ingredients
- 1 lb. clam(s), cleaned and grilled
- 1 lb. Prawns, large, cleaned, tossed in seasoning and grilled
- 1 tbsp garlic, minced
- 1 tbsp shallot(s), minced
- 3 oz. Libby's Pumpkin Puree
- 3 oz. unsalted butter
- 2 oz. white wine
- 1 oz. orange juice
- 1 cup Seafood stock
- 1/2 ea. Red chili peppers, cut in half lengthwise
- 1/4 bunch cilantro, fresh, picked
- salt and pepper, to taste
