Red Velvet Dirty Soda with Cheese Foam

Directions

  1. Blend milk, cream, PHILADELPHIA Cream Cheese, sugar, and salt until smooth. Divide into 4 iSi canisters, charge each with 1 N2 cartridge, and refrigerate until service.
  2. Whisk the jar of KOOL-AID Cherry powder with 1/2 gallon warm water until dissolved. Chill.
  3. Into each glass, add a spoonful of lychee jelly chunks, followed by 4 tbsp KOOL-AID syrup. Fill with sparkling water. Top with a generous swirl of Philly Cream Cheese Foam and finish with a sprinkle of dry KOOL-AID Cherry powder.

  • 6 cups cream, heavy
  • 2 1/2 cups Kraft® Philadelphia Original Cream Cheese
  • 16 tbsp. sugar
  • 1 tbsp. salt Nitrogen, (1 charger per iSi)
  • (7) 2 L. bottles water, sparkling
  • 1 jar KOOL-AID® Cherry powder, (1 tbsp per drink + extra for sprinkling)
  • 1/2 gal. water, warm, (for KOOL-AID® syrup)
  • 4 cups lychee jelly chunks, strained
  • Philly cream cheese foam, prepared
