Rice Mix


  1. Bring chicken stock and saffron to boil and add rice (may need to add another cup of water 25 minutes in)  Simmer for 30 minutes, stirring occasionally, and stir more often toward the end. Rice should be slightly al dente. Rice should be very sticky.
  2. Take off heat and add in cheese mix, bread crumbs and parsley.
  3. Salt and Pepper to taste and then place in bowl to cool.


  • 1/2 tsp black pepper
  • 2 qt chicken stock
  • 3 tbsp Peak Fresh Produce® Parsley, Fresh, finely chopped
  • 1 1/2 lb Piancone® Rice, Arborio Superfino Risotto
  • 1/4 cup Roma® Bread Crumbs, Italian
  • 3/4 cup Roma® Cheese, Parmesan, grated
  • saffron, pinch
