Roma Cheese Tortellini with Sautéed Grilled Vegetables

Directions

  1. Bring a large pot of water to a boil and cook tortellini according to package instructions - once cooked drain and set aside.
  2. In large frying pan, add the olive oil and garlic, cook for 2 minutes on medium heat. Add the butter to the pan and cook until melted.
  3. Add tortellini, grilled vegetables, salt and pepper to the pan and stir until well coated - cook for an additional 5 minutes.
  4. Pour into take out container and top with parmesan cheese.

Ingredients

  • 2 tbsp butter
  • 1 tbsp garlic, crushed
  • 1 tbsp oil, olive
  • to taste cheese, Parmesan
  • 1 tbsp parsley, fresh, chopped
  • to taste salt and pepper
  • 3 cups grilled vegetables, cut into bite size pieces (red peppers, zucchini, summer squash)
