Sesame Crusted Tuna with Chipotle Beurre blanc


  1. Coat tuna with sesame seeds.
  2. Heat oil in a sauté pan, when hot sear tuna for just a minute on each of the 4 sides.
  3. Remove tuna and allow to rest for 1 minute. Slice thin and fan on the center of the plate.
  4. Garnish with sauce on opposite side of plate and place a spoon in the middle and drag to the right . Garnish with the chives over tuna and serve.


  • 1 oz chipotle beurre blanc
  • 2 strings chives, fresh
  • 1 oz Roma® Oil, Olive
  • 1 oz sesame seeds
  • 5 oz tuna, block(s)
