Sicilian Rice Balls with Pepperoni, Beef, and Cheese

Directions

  1. Slightly wet palms of your hands. Use a ½ cup  or ice-cream scoop and create a patty.
  2. Add 2 tablespoons of the meat filling to the middle of the patty and shape the rice around the meat to form a ball (about the size and shape of a small orange). Roll until the rice sticks together to form the ball. Dip in egg wash  and then roll in Italian breadcrumbs. Fry at 350 °F until golden brown. Optional: serve with pasta sauce.

Ingredients

  • 3 Nature's Best Dairy® Egg(s), beaten
  • 2 cups Roma® Bread Crumbs, Italian
  • Roma® Tomato Sauce

Rice Mix

Directions

  1. Bring chicken stock and saffron to boil and add rice (may need to add another cup of water 25 minutes in)  Simmer for 30 minutes, stirring occasionally, and stir more often toward the end. Rice should be slightly al dente. Rice should be very sticky.
  2. Take off heat and add in cheese mix, bread crumbs and parsley.
  3. Salt and Pepper to taste and then place in bowl to cool.

Ingredients

  • 1/2 tsp black pepper
  • 2 qt chicken stock
  • 3 tbsp Peak Fresh Produce® Parsley, Fresh, finely chopped
  • 1 1/2 lb Piancone® Rice, Arborio Superfino Risotto
  • 1/4 cup Roma® Bread Crumbs, Italian
  • 3/4 cup Roma® Cheese, Parmesan, grated
  • saffron, pinch

Pepperoni, Beef, and Cheese Filling

Directions

  1. Sauté the onions in the olive oil, about 2 minutes Add the beef, chopping as you cook.
  2. Add pepperoni, breaking it up as it cooks together. Add  tomato paste, basil and oregano.
  3. Cook for 15-20 minutes, stirring constantly.
  4. The mixture should be slightly moist Add the cheese and set aside to cool. Tip:  It’s easier to work with if both mixtures  are cold in the process of forming rice balls.

  • 4 oz Roma® Pepperoni, chopped
  • 1/4 cup Roma® Cheese, Romano
  • 1 tbsp Roma® Tomato Paste
