Sockeye Salmon with Chipotle Lime Glaze


  1. Lightly season salmon and place on grill.
  2. Cube and boil squash until tender.
  3. In a sauté pan, add butter and brown sugar. Add squash and mash until all mixed up. Add chipotle base and add 1 oz of water to dissolve.
  4. In a cup, mix rest of the water and corn starch until smooth. Heat base to a boil and add mixture to thicken.
  5. Place mashed in center of plate. Place salmon on top. Brush salmon with glaze. 11. Add a charred lemon wheel to it and serve


  • 1 oz. chipotle lime base
  • 1 oz. corn starch
  • 1 Empire's Treasure® Salmon, Sockeye Fillet(s)
  • 3 oz. Nature's Best Dairy® Butter
  • 3 oz. Peak Fresh Produce® Yellow Squash
  • 3 oz. Peak Fresh Produce® Zucchini
  • 2 oz. sugar, brown
  • 2 oz. water
