St. Paddy’s Loaded Fries


  1. Prepare gravy as indicated on package and store in refrigerator until needed. Measure out 12 ounces and heat in microwave in loosely covered dish for 90 seconds. Remove from microwave and stir so gravy is heated throughout.
  2. To prepare corned beef, follow heating instructions on brisket product label.
  3. After product is fully cooked (verified by meat thermometer), place brisket on a cutting board and allow to rest until mostly cool.
  4. Shred the brisket with a fork, and then use a knife to chop the shredded meat into smaller portions for the loaded fries.
  5. To prepare French fries, follow frying instructions on the package label. After frying, drain excess oil.
  6. To assemble Loaded Fries, place French fries on serving platter. Top with gravy, cheese curds, corned beef and green onions, if desired. Serve immediately.


  • 32 oz French fried potatoes, prepared
  • 12 oz white pepper gravy, heated
  • 8 oz cheese curds, cheddar
  • 1 lb West Creek® Corned Beef Brisket, with seasoning packet
  • onion(s), green, chopped, if desired
