Street Corn Nachos


  1. Combine avocado, mayonnaise, lime, pepper, cilantro, salt and sugar in a food processor bowl and puree until smooth. Transfer to a squeeze bottle and store chilled for service.
  2. For each serving: prepare 5 oz. of chips according to the package directions.
  3. Top with a drizzle of 1 1/2 oz. of avocado sauce, 2 1/2 oz. corn and jalapeno blend prepared according to the package directions, sprinkle with 1 oz. of cheese and serve with a 2 oz. cup of guacamole.


  • 16 oz cheese, cotija, crumbled
  • 2 ct lime(s), zested and juiced

  • 1 bag Simplot® RoastWorks®: Flame-Roasted Corn & Jalapeño Blend
  • 1 bag Simplot® Select Recipe®: Chips
  • 2 tbsp sugar
