Tikka Masala Crispy Fries

Directions

  1. Prepare the fries to manufacturer's directions.
  2. Ladle heated Tikka Masala sauce over fries.
  3. Top with cilantro and red onions.
  4. Drizzle the Tikka Masala sauce over the top.

Ingredients

  • 8 oz Lamb Weston® Crispy on Delivery Fries 1/2" Concertinas®
  • 3 oz Tikka Masala Sauce, (see recipe below)
  • 1 tbsp cilantro, fresh, chopped
  • 1 oz onion(s), red, small diced
  • 1 oz yogurt, Greek, plain, thinned with water
  • salt and pepper, to taste

Tikka Masala Sauce

Directions

  1. Melt the ghee or butter in a large pot over medium heat. Add the onions and jalapenos and season with 1 tsp. of salt. Cook until onions are tender and beginning to caramelize.
  2. Add the garlic and ginger for approx. 2-3 minutes. Add dried aromatics - cumin, coriander, fenugreek leaves, and garam masala for another minute until very fragrant.
  3. Add the tomato paste and crushed tomatoes, bring to a boil. Reduce heat and simmer uncovered until the sauce has reduced to a good consistency (approx. 30 minutes). Add the heavy cream and return to a boil.
  4. Puree slightly for a smoother sauce.
  5. Season with salt and pepper to taste.
