Tikka Masala Crispy Fries
Directions
- Prepare the fries to manufacturer's directions.
- Ladle heated Tikka Masala sauce over fries.
- Top with cilantro and red onions.
- Drizzle the Tikka Masala sauce over the top.
Ingredients
- 8 oz Lamb Weston® Crispy on Delivery Fries 1/2" Concertinas®
- 3 oz Tikka Masala Sauce, (see recipe below)
- 1 tbsp cilantro, fresh, chopped
- 1 oz onion(s), red, small diced
- 1 oz yogurt, Greek, plain, thinned with water
- salt and pepper, to taste
Tikka Masala Sauce
Directions
- Melt the ghee or butter in a large pot over medium heat.
Add the onions and jalapenos and season with 1 tsp. of salt.
Cook until onions are tender and beginning to caramelize.
- Add the garlic and ginger for approx. 2-3 minutes. Add dried aromatics - cumin, coriander, fenugreek leaves, and garam masala for another minute until very fragrant.
- Add the tomato paste and crushed tomatoes, bring to a boil.
Reduce heat and simmer uncovered until the sauce has reduced to a good consistency (approx. 30 minutes).
Add the heavy cream and return to a boil.
- Puree slightly for a smoother sauce.
- Season with salt and pepper to taste.
