Zebec® Mediterranean Grain Bowl

Directions

  1. In a bowl add quinoa, mint, parsley, a quarter teaspoon of salt, and one tablespoon of extra virgin olive oil fold to combine.
  2. Pre-Heat oven to 450°.to 125 degrees.
  3. Toss broccoli florets, cauliflower florets, Aleppo pepper, three tablespoons of extra virgin olive oil. Place on half sheet pan and place in oven to cook for 8-10 minutes. Remove from oven after cooking and hold for plating.
  4. Place falafel fritters on sizzle platter and warm in oven for 4-5 minutes from thawed.
  5. In a bowl add two ounces of extra virgin olive oil, orange zest, thyme, and crumbled feta. Toss together then hold as a garnish for plating.
  6. For the tahini citrus dressing, place tahini paste, lemon juice, orange juice, water, sumac, yogurt, garlic, sea salt, and pepper in a bowl then whisk to combine.
  7. Spread A Swoop of Feisty Feta on the Bottom Edge of the Bowl.
  8. Place A Mound of Warm Herbed Ancient Grains Slightly Off-Center.
  9. Arrange Roasted Tomatoes, Charred Broccoli and cauliflower, And Pickled Onions in Contrasting Segments.
  10. Add Falafel Fritters on Top.
  11. Drizzle with Tahini-Citrus Sauce.
  12. Sprinkle with Marinated Feta, and Pomegranate Arils.
  13. Finish With Olive Oil and a Pinch of Flaky Salt.
