Zesty Mac & Cheese SIDEWINDERS™ Fries


  1. Cook pasta according to package instructions.
  2. Melt butter in a saucepot over medium heat. Add flour and cook approximately 3 minutes, stirring constantly, to make a roux.
  3. Whisk in milk and heavy cream and bring to a simmer to create a smooth white sauce. Stir in salt, black pepper and red pepper flakes. Add shredded cheese and whisk until cheese is melted. Add pasta to the saucepot and fold together gently. Keep warm.
  4. To serve; Prepare 6 oz. of SIDEWINDERS™ Fries according to package instructions. Place into a serving container and top with 10 oz. prepared macaroni and cheese.
  5. Garnish with chopped cilantro, lime zest, and Tajin.


  • 16 oz dry pasta , medium shells
  • 1/2 cup butter
  • 1/2 cup flour, all-purpose
  • 3 cups milk, whole
  • 2 cups cream, heavy
  • 6 cups cheese, pepper jack, shredded
  • 1 tsp salt
  • 1/2 tsp black pepper, ground
  • 1 tbsp red pepper, flakes
  • 1 bag Simplot SIDEWINDERS™ Fries: Original Cut Clear Coated SIDEWINDERS™ Fries Original Cut
  • chopped cilantro, fresh, for garnish
  • lime zest, as needed
  • Tajin, as needed
