Bacon Scallops with Lemon Caper Sauce
Directions
- Bake scallops, according to package instructions, til just under done and let stand to finish cooking.
- To make the lemon caper sauce, melt butter and bring to just a boil. Add all other ingredients except capers and let simmer for 10 minutes. Remove from heat, add capers, and hold warm.
- Arrange on plate, drizzle with sauce, sprinkle parsley and serve.

- 2 each Ridgecrest® Scallops, Bacon-Wrapped
- 4 Tbsps. Roma® Capers
- 1/4 cup wine, white
