Baja Battered Shrimp and Fruit Salad


  1. Fry shrimp as directed and set aside.
  2. While shrimp cooks, toss remaining ingredients in a large bowl and dress with Catalina dressing.
  3. Divide amongst 10 bowls and place four cooked shrimp atop each salad.
  4. Garnish with sunflower seed kernels and a lime wedge.

  • 1 cup Magellan® Pineapple, Canned Diced
  • 1 cup mango(es), diced
  • 3 heads Peak Fresh Produce® Lettuce, Romaine, chopped
  • 1/4 cup Peak Fresh Produce® Onion(s), Red, julienne
  • 4 Tbsp Peak Fresh Produce® Oregano, chopped
  • 5 Peak Fresh Produce® Tomato(es), quartered
  • 5 Tbsp. pepper(s) jalapeños, pickled, sliced
  • 1/4 cup roasted red peppers, sliced
  • 2 cups Village Garden® Honey French Dressing
