Brisket Biscuit Hash

Directions

  1. Thaw biscuits for 15-30 minutes at room temperature.
  2. Cut biscuits into six pieces and place in mixing bowl; toss with melted butter until evenly coated. Place biscuit pieces on parchment lined or greased sheet pan.
  3. Bake at 375°F for 10-12 minutes. (325°F for 8-10 minutes if using a convection oven)
  4. Per serving, preheat a large skillet over medium-high heat; add 1 Tbsp (0.5 oz) melted butter. Add 3 oz sweet potatoes, 2 oz brisket, 1 oz peppers and 0.5 oz onions to skillet; stir to combine and cook until heated thoroughly. Add 6 biscuit pieces (1 biscuit) to pan and carefully stir to combine; do not overmix.
  5. Transfer to serving dish and top with 2 sunny side up eggs; serve immediately.

  • 6 cups sweet potatoes, roasted, 3/4-inch pieces
  • 4 cups beef, brisket, smoked, 1-inch chunks
  • 2 1/4 cups bell peppers , roasted, 1-inch pieces
  • 24 ea. egg(s), sunny side up
