West Creek® Cajun Elote Grilled Wings


  1. Warm butter flavored oil in a sauté pan over medium heat. Add onion and garlic to pan and cook for 2 minutes to caramelize onions. Remove from heat and cool.
  2. Whisk together, mayonnaise, chipotle puree, corn, onions, sage, lime juice and green onion. Reserve refrigerated for service.
  3. Spray the wings with pan spray then toss with Cajun seasoning.
  4. Cook on medium heat area of the grill to an internal temperature of 170°F.
  5. Place cooked wings in a bowl and toss with chipotle mayonnaise mixture.
  6. Place on a plate or in a bowl then sprinkle with cotija cheese and chives then serve.


  • 8 ea. West Creek® first and second joint party wings
  • 3 tbsp Magellan® Cajun seasoning
  • 1 ea. Brilliance Pan Spray
  • 1/4 cup West Creek® Mayonnaise
  • 1 tsp Contigo® chipotle peppers, pureed
  • 1/2 ea. Peak Fresh Produce® Lime(s), only
  • 1/2 tsp Peak Fresh Produce® Onion(s), Green, chopped
  • 1/2 tsp Peak Fresh Produce® Cilantro, minced
  • 1/2 ea. Peak Fresh Produce® Onion(s), Red, small diced
  • 1/4 tsp Peak Fresh Produce® Garlic, Clove(s), minced
  • 1 tsp Brilliance Butter Flavored Oil
  • 1 ea. West Creek® cobette, cooked and kernels removed
  • 1 tsp Peak Fresh Produce® Chives, Fresh, chopped for garnish
  • 1 tbsp Contigo Cotija Cheese , grated, for garnish
