In a large bowl, blend Greek yogurt, whole milk, PHILADELPHIA® Cream Cheese, vanilla, salt, and maple syrup until smooth. Stir in oats, shredded carrots, cinnamon, and chia seeds. Cover and refrigerate overnight (at least 4 hours).
Bring raisins and water to a boil. Continue boiling until the water level drops below the raisins. While hot, blend until smooth, strain, then return to blender. Add brewed coffee and blend until fully incorporated. Chill until ready to use.
In each serving vessel, layer a generous drizzle of raisin caramel, followed by oats, another layer of caramel, and a final layer of oats. Top with a sprinkle of raisin granola.
