Carrot Ginger Soup

Directions

  1. Heat oil in soup pot, and then add onion, carrot, and ginger. Cook for 7-8 minutes.
  2. Add water, chicken base, zesty orange sauce and skim milk.
  3. Bring to a simmer until all vegetables are cooked through. Puree in a blender until smooth.
  4. Divide soup between 10 soup bowls and garnish with two crackers each.

  • 7 cups Carrots, peeled, diced
  • 1 Tbsp. ginger, root, minced
  • 2.5 cups water
  • 2.5 tsp. Minor's Chicken Base Low Sodium
  • 6 Tbsp. Minors Zesty Orange Sauce
  • 9 fl. oz. Milk
  • 3.5 oz. whole wheat crackers
