Bring a small saucepan with acidulated water to a simmer over medium heat.
Heat a medium sauté pan over medium heat. Add chorizo and sauté for 2-3 minutes. Add bell peppers and continue to cook until chorizo is cooked through and set aside.
Carefully add eggs to saucepan of simmering water and gently cook until yolks reach your preferred doneness.
Place fries into fryer at 350˚F (180˚C) and fry for 2 3/4 minutes.
Divide Tuscan Herb Small Diced potatoes into serving bowls and top with chorizo & pepper mixture.
Top with poached eggs and warm hollandaise sauce.
