Directions
- Fry ham steak on sauté pan and remove.
- Assemble bowl with ham, grits, bacon lardons, roasted mushrooms and boiled peanuts. Top with red eye gravy and prepared egg.
Ingredients
- 1/2 lb. Smithfield® Ham, steak-sized portion
- 1/2 lb. Smithfield® Bacon, cut into lardons, fried until crispy
- 1 egg(s), cooked to your liking
- handful peanuts, boiled, deshelled
Red Eye Gravy
Directions
- Add butter to pan to melt.
- Whisk in flour, bone broth, sugar and coffee to pan until thickened.
Ingredients
- 2 tbsp. butter
- 3 tbsp. flour, all-purpose
- 1 cup beef bone broth
- 1/2 tsp. sugar
- 1/2 cup coffee, brewed
Garlic Goat Cheese Grits
Directions
- Bring water, milk and butter to boil.
- Add grits and garlic and whisk until creamy. Cook for 5 minutes.
- Add goat cheese until incorporated. Add salt and pepper to taste.

- 2 cups Milk
- 4 oz. butter
- 1 cup quick cook white grits
- 1 tbsp. garlic, minced
- 4 oz. cheese, goat
- salt and pepper, to taste
Balsamic Roasted Mushrooms
Directions
- Preheat oven to 350°F.
- In large bowl, add quartered mushrooms, garlic, olive oil, balsamic vinegar and seasonings. Toss and place on baking sheet.
- Roast mushrooms to desired texture.

- 6 oz. mushroom(s), portobello, baby, quartered
- 2 garlic, clove(s), minced
- 3 tbsp. oil, olive
- 1 tsp. vinegar, balsamic
- salt and pepper, to taste
- thyme, fresh, to taste
