Grilled Peach and Bacon Guacamole
Directions
- Dice the raw bacon and cook. Drain and set aside.
- Grill the peaches long enough to slightly soften and grill mark. Dice the peaches and mix the juice of one lime and a sprinkling of salt. Dice the jalapenos, onion, and cilantro. Mix with the peaches and lime juice.
- Mash the avocados to the desired consistency. Mix in the juice from the remaining lime, cumin, salt.
- Combine the avocado mixture and peach mixture and stir carefully. Add in the bacon. Adjust seasoning as needed.

- 3 jalapeño(s), finely diced and seeded
- 3 peach(es), halved and pitted

- - salt, to taste
