Grilled Shrimp Mediterranean Bowl

Directions

  1. Thaw avocado according to package instructions.
  2. Prepare grain blend and haricot vert according to package instructions. Chill and hold separately.
  3. Place avocado, olive oil, lemon juice and water in a blender. Process until smooth and creamy. Season with salt and pepper. Combine 8 fl. oz. dressing and grain blend, toss to coat. Rest for 30 minutes to allow flavors to blend.
  4. For each serving; place 8 oz. (1 cup) of grain blend in serving bowl. Top each with 4 shrimp, 1 1/2 oz. haricot vert, and 1 oz. tomatoes. Drizzle with 1/2 fl. oz. avocado dressing.
