Grilled Watermelon Salad

Directions

  1. Place the red onion in the vinegar for 5 minutes, then pat dry.
  2. Toss the watermelon in olive oil. Grill watermelon until pronounced grill marks show. Place on plate and sprinkle onion over melon. Sprinkle salt and pepper on watermelon. Sprinkle feta over that then top with mint and serve

Ingredients

  • 1 pinch black pepper, whole , cracked
  • 1/2 oz Peak Fresh Produce® Mint, sliced
  • 2 oz Peak Fresh Produce® Onion(s), Red, sliced
  • 2 oz Roma® Cheese, Feta, crumbled
  • 1 oz Roma® Oil, Olive
  • 1 pinch salt, sea
  • 2 oz vinegar, sherry wine    
  • 8 oz watermelon, diced
