Empire's Treasure® Mahi Mahi Street Tacos

Directions

  1. Season fish on both sides with S&P to taste. Heat a greased nonstick skillet on medium-high heat. Place the fish in the skillet and cook for about 3 minutes per side. When fish is done cooking, transfer to a cutting board and roughly flake with a fork.
  2. To assemble tacos, divide the fish amongst the tortillas and top with the mango salsa and crumbled cotija cheese. Garnish with cilantro and serve with lime wedges.

  • 3 3 oz Empire's Treasure® Mahi portions
  • Contigo Cotija Cheese , crumbled
  • 6 ea Contigo® Tortilla(s), Corn
  • Peak Fresh Produce® Cilantro, Fresh, for garnish
  • 3 oz mango salsa, (see recipe below)

Mahi Taco Mango Salsa

Directions

  1. Combine all the ingredients in a bowl, cover and refrigerate for 20 minutes.

  • 2 ea Peak Fresh Produce® Mangos, diced
  • 1/2 ea Peak Fresh Produce® Onion(s), Red, chopped
  • 2 1/2 tbsp lime, juice
  • 3 tsp Peak Fresh Produce® Cilantro, chopped
  • 2 tsp West Creek® Honey
