Mexican Meatball Torta


  1. In a skillet, warm pre-cooked BURKE® Beef Meatballs w/Chipotle-Style Seasonings.
  2. Mix in enchilada sauce and cream cheese.
  3. In a separate skillet, roast peppers and onions.
  4. Cut bolillo rolls in half and toast.
  5. To assemble each torta, place four meatballs and sauce between the 2 bolillo halves. Add 1/4 cup onions, 1/4 cup peppers and 1/4 cup cheese and pop in oven (425 degrees fahrenheit) until cheese melts.
  6. Garnish with chopped onion, cilantro and pickled jalapeños (if desired). Repeat steps for additional sandwiches.


  • 1 1/2 cups enchilada sauce, red, prepared
  • 1 cup cream cheese
  • 16 BURKE® Beef Meatballs w/Chipotle-Style Seasonings
  • 4 Bolillo rolls
  • 1 cup pepper(s), roasted red
  • 1 cup onion(s), roasted
  • 1 cup cheese, pepper jack, melted
  • onion(s), chopped. as needed
  • jalapeño(s), pickled, as needed
  • cilantro, fresh, as needed
