Remove turkey burgers from the packaging and place on a wire rack.
Season and grill or pan-sear over medium-high heat for 5–6 minutes per side, until internal temperature reaches 165°F. Let rest 2 minutes.
Mix adobo sauce, cumin, paprika, white onion, cilantro, lime, garlic and chipotle pepper. After the first flip of the burger top with the adobo sauce.
Mix elote topping. Combine corn, mayo or crema, cotija, chili powder, lime juice, and cilantro. Taste and adjust seasoning.
Assemble the Burgers. Spread avocado on the bottom bun, add turkey patty, spoon over elote-style corn, and top with pickled onions. Finish with top bun offset to showcase the burger.
