Roma® Gluten-Free Penne Pasta


  1. Dip frozen pasta in boiling Water For 15 Seconds
  2. Transfer pasta into a large mixing bowl and add pesto, mascarpone cheese, sliced grilled chicken, lemon juice and 1/4 cup of reserved pasta water.
  3. Stir in cherry tomatoes, and season with salt and pepper. Toss well to coat.
  4. Top with fresh basil, Parmesan cheese.


  • 1/2 lb Roma® GF Penne Pasta
  • 2 tbsp Roma® extra virgin olive oil
  • 1/2 cup Roma® Basil Pesto
  • 1/2 cup Roma® Cheese, Mascarpone, at room temperature
  • 8 oz West Creek® FC Grilled Chicken Breast, sliced (heated to internal temperature of 165)
  • 1 tbsp lemon juice
  • 1 cup Peak Fresh Produce® Tomato(es), Cherry, halved
  • 1/2 tsp salt
  • 1/4 tsp black pepper, ground
  • basil, leaves, fresh, chiffonade
  • 2 tbsp Roma® Cheese Grated, Parmesan
