Romana Grilled Chicken


  1. Sprinkle Chicken with Creole seasoning and then place on grill.
  2. Place olive oil on flat grill and place zucchini on oil, then sprinkle with Pork seasoning.
  3. Turn Chicken and flip making diamond marks on chicken, when 95% cooked place watermelon on chicken, then top with fresh mozzarella to slightly melt.
  4. Roll zucchini and place in middle of plate. Place chicken on Zucchini. Top with Balsamic glaze and fresh basil and serve.


  • 1 ea West Creek® Chicken, Breast(s)
  • 2 slices Roma® Cheese, Mozzarella
  • 1 ea watermelon, sliced
  • 1/2 oz Peak Fresh Produce® Basil, chopped
  • 1 oz Piancone® Balsamic Glaze
  • 3 each Peak Fresh Produce® Zucchini, thin sliced
  • 3 pinches Chipotle Creole seasoning
  • 2 pinches Magellan® Pork seasoning
  • 1 oz Piancone® Oil, Olive
