Preheat your waffle iron to medium-high and lightly grease it with pan spray.
Roll or press each biscuit into a 5 to 6-inch round. Keep the thickness even for proper cooking.
Place one dough round on the waffle iron. Top with the cooked sausage patty and shredded cheddar. Drizzle with maple syrup if using. Cover with the second dough round and press edges to seal. Close the waffle iron and cook for 4–6 minutes until golden brown and biscuit dough is fully cooked.
While the waffle is cooking, heat a sauté pan over medium high heat add butter to melt. Crack the egg into the pan season with salt and pepper then cook for 1-2 minutes until egg white is set. Turn off heat and slide pan off of burner.
Remove Waffle and place on center of warm entrée plate. Spoon warm country gravy over the waffle. Gently place the sunny-side egg on top. Garnish with chopped chives and sliced jalapeno.
