Tri-Color Cheese Tortellini Caprese Salad

Directions

  1. Bring a large pot of salted water to a boil over high heat. Add the tortellini and cook according to package instructions until tender. Drain well, rinse under cold water, and shake dry.
  2. Transfer tortellini to a mixing bowl, toss with 2 tablespoons of olive oil, and let cool to room temperature.
  3. In a separate bowl, combine the remaining olive oil, cherry tomatoes, basil, parsley, lemon juice, mozzarella pearls, and red pepper flakes. Season with salt and black pepper to taste.
  4. Once the tortellini have cooled, toss gently with the prepared dressing until evenly coated.
  5. Divide into bowls or transfer to a serving platter. Serve immediately.

  • 5 tbsp. Roland® Olive Oil
  • 1/2 cup Peak Fresh Produce® Cherry Tomatoes Yellow, halved
  • 3 tbsp. basil, leaves, fresh, chopped
  • 1/4 tbsp. parsley, fresh leaves, finely chopped
  • 1/2 tbsp. lemon juice
  • 1 cup mini mozzarella pearls
  • 1 tsp. Roma® Crushed Red Chili Flakes
  • salt and black pepper, to taste
