Asparagus with Hollandaise

Directions

  1. Warm asparagus in steamer or sauté pan.
  2. Place asparagus on warm serving platter then top with hollandaise sauce.

Ingredients

  • 1 lb Peak Fresh Produce® Asparagus, peeled and trimmed then blanched
  • 1 cup hollandaise sauce, (see recipe below)

Directions

  1. In blender add yolks, mustard, lemon juice and tabasco. Blend for 5-6 seconds.
  2. With blender running on high slowly add the melted butter.
  3. Sauce will thicken quickly. Keep in a warm place for service.

  • 3 ea Nature’s Best Dairy® egg yolks
  • 1/4 tsp mustard, dijon
  • 2 tbsp Ascend® Juice, Lemon
  • 1/8 tsp Tabasco® Sauce
  • 1/2 cup Nature's Best Dairy® Butter, melted
