Black Bean Masa Cake


  1. Mix the masa per directions. Let the masa mixture stand chilled for 2 hours. Shape the mix into a half-moon shape.
  2. In a bowl, add corn, beans, onions, peppers, tomatoes, cilantro, salt and pepper and mix. Squeeze the lime wedge into the mixture.
  3. Drizzle olive oil onto a flat top grill. Grill the masa cakes on each side until golden brown.
  4. Place the masa cakes onto a plate and spread the mixture evenly over top of the cakes.
  5. Slice 1/2 the avocado, place the avocado slices on the side of the plate and serve.


  • 1 cup masa mix
  • 1/2 Peak Fresh Produce® Avocado(es), sliced

  • 1 Peak Fresh Produce® Lime(s), wedge

  • 1 Peak Fresh Produce® Tomato(es), Roma , diced
  • 1 pepper(s), poblano, sliced
  • 2 tbsp. Roma® Oil, Olive
  • 1 pinch salt and pepper
  • 1/4 cup West Creek® Beans, Black
