Braveheart® Birria Tacos


  1. In a rondeau over medium heat add water and birria concentrate. Add short ribs and cover then lower heat to a simmer and cook for 3-4 hours.
  2. Once short ribs are fork tender. Remove meat from the bone and hold the meat in the sauce for service.
  3. Dip tortillas in sauce then warm on griddle.
  4. Place two tortillas on plate then a portion of cheese and short ribs.
  5. Garnish with onion and cilantro then enjoy.


  • 10 lbs Braveheart® Black Angus Beef Short Ribs
  • 1 1/3 gl water
  • 5 lbs Contigo® birria concentrate
  • 8 ea Contigo® 6-inch white corn tortillas
  • 1 cup Peak Fresh Produce® Onion(s), Yellow, small dice
  • 4 tbsp Peak Fresh Produce® Cilantro, leaves, hand torn
  • 1 lb Corazo® Tres-Amigos shredded cheese
