Bring half gallon of water, Cajun seasoning and lemons to a boil. Let boil for 5-6 minutes.
Combine remaining water and ice cubes.
Drop shrimp in boiling water and cook for 2-3 minutes until curled and light pink. Remove from boiling water and drop in ice water to stop cooking. Let them sit in ice water for 20 minutes.
Remove and drain shrimp from ice water.
Season burgers with pepper on both sides. Cook on medium high heat rea of the grill turning only once about 3-4 minutes per side for medium. Top meat with brie to melt.
Place burger on toasted bun then top with a portion of boiled shrimp and serve.
