Chipotle BBQ Ribs with Roasted Corn


  1. Pour BBQ sauce in a bowl and whip in the base.
  2. Lightly brush the ribs and smoke at 300° for three hours. Change chips each hour for maximum smoke flavor.
  3. Remove ribs and brush with BBQ sauce and char grill. Let ends char and caramelize. Flip ribs and repeat, returning them to the grill at 90°. Cook for another minute creating nice char on top of ribs.
  4. Brush with sauce one last time and place on plate.
  5. At the same time you put ribs on the grill, spray corn with butter and place on char grill. Move around as needed and keep spraying with butter mist.  Add to plate and top with a sprinkle of green onion.

  • 3 corn, sweet
  • 1 oz. Peak Fresh Produce® Onion(s), Green, sliced
  • 4 oz. West Creek® BBQ Sauce, Smokey
