Contigo® Guajillo Carrot Coulis


  1. Place all ingredients in a saucepan over high heat. Bring to a boil then simmer for 5-6 minutes until carrots are soft.
  2. Pour the ingredients from the saucepan into a blender and puree until smooth.
  3. Pour this mixture into a streaker bottle and reserve for service.


  • 1 1/2 cups Peak Fresh Produce® Carrot(s), shredded
  • 2 cups vegetable stock
  • 1 cup Peak Fresh Produce® Onion(s), Yellow, peeled and rough chopped
  • 2 ea. Peak Fresh Produce® Garlic, Clove(s)
  • 1 tbsp West Creek® Honey
  • 1 1/2 tbsp Contigo® guajillo pepper paste
  • 1/4 tsp West Creek® sea salt kosher
