Cranberry Merlot Gastrique

Directions

  1. In a saucepan over medium high heat add oil. Next add onion, garlic, salt and pepper and cook for 1-2 minutes. 
  2. Add merlot and reduce by half. 
  3. Add cranberries, orange juice, sugar and basil and simmer for 10-15 minutes.  (Until cranberries skin starts to split.) 
  4. Transfer mixture to food processor and puree. Strain and serve.

  • 1/2 tsp. black pepper
  • 1 bag cranberries, fresh
  • 1 1/2 tsp. garlic, clove(s), minced
  • 2 Tbsp. oil
  • 2 Cup(s) orange juice
  • 2 Tbsp. Peak Fresh Produce® Basil, minced
  • 1/4 Cup(s) Peak Fresh Produce® Onion(s), Red, diced
  • 1/8 tsp. salt
  • 1 Cup(s) sugar
  • 1 1/2 Cup(s) wine, merlot
