Dijon Herb Pork Rack


  1. Remove Allegiance pork rack from refrigeration and set on counter for 30 minutes.
  2. While rack is coming to room temperature, make the Dijon coating.
  3. Mix Dijon, fresh herbs and panko in a bowl.
  4. Season pork rack with salt and pepper and liberally coat with mustard mixture.
  5. Place in a casserole and bake at 350 degrees Fahrenheit for 1.25 hours or until internal temperature of 145 degrees has been achieved.
  6. Rest for at least 20 minutes to let juices settle. Slice and serve.


  • 1 cup panko breadcrumbs
  • 4 tbsp mustard, dijon
  • 1 Pork Rack, 10 bone
  • 4 tbsp Peak Fresh Produce® Rosemary, Fresh, chopped
  • salt and pepper, to taste
  • 4 tbsp Peak Fresh Produce® Thyme, Fresh, chopped
