Par cook the bacon about fifty percent of the way. Then cool down.
Soak toothpicks in water for 30 minutes to one hour. This will stop them from flaming up on the grill.
Cut each piece of bacon in half. Wrap each shrimp in a half slice of bacon and secure with toothpicks. Cook shrimp on medium high heat area of the grill for 2-3 minutes per side until shrimp is opaque in color and curled with bacon becoming crispy. Remove shrimp form the grill and reserve.
In a bowl whisk together chipotle, lime juice, mayonnaise, and cilantro. Serve this with shrimp as a side sauce.
