Empire’s Treasure® Volcano Snapper
Directions
- Whisk Sriracha, cilantro, and lemon juice in prepared hollandaise sauce and reserve for service.
- Heat oil in sauté pan over medium-high heat, then add fish—skin side down.
- Cook until crispy, about 2-3 minutes, then turn and caramelize for 2-3 minutes.
- Plate fish and top with sauce.
Note: Add crab or shrimp for an upcharge.

- 2 ea Empire's Treasure® Red Snapper Fillet(s), skin on -10 oz. filet
- 6 oz Custom Culinary® hollandaise sauce, prepared
- 1 1/2 tbsp Sauce Chili Sriracha
- 1 tsp Ascend® Juice, Lemon
- 1 tsp Peak Fresh Produce® Parsley, Fresh, minced
- 2 tbsp Roma® extra virgin olive oil
- 1/4 tsp Magellan® sea salt
- 1/4 tsp Magellan® Black Pepper, ground
