Enchiladas Suizas Verdes

Directions

  1. Preheat convection oven to 350°F.
  2. Prepare Pioneer Peppered Gravy per package instructions. Slowly mix in salsa verde. Combine well. Set aside and allow to cool.
  3. Prepare a shallow hotel pan with non-stick spray.
  4. Soften Mi Rancho Corn Tortillas and begin building enchiladas by dipping the corn tortillas into warmed sauce mixture (or briefly dipping in hot oil), adding cheese, then rolling. Tightly place filled tortillas seam side down into prepared hotel pan or sizzle skillet.
  5. Top with additional sauce and cheese.
  6. Bake for 25-30 minutes or until cheese has browned.

  • chicken, shredded, as needed
  • Mi Rancho® Corn Yellow Thick Tortilla 6″, as needed
  • cheese mix, (Asadero, Oaxaca, Cotija) as needed
