Fried Haddock and Waffles

Directions

  1. To prepare the waffle batter place flour, baking powder, sugar and salt in a bowl. Whisk to combine.
  2. In a small bowl, mix egg yolks, milk and butter. Set aside.
  3. In a separate bowl, whip egg whites with a whisk until stiff peaks form.
  4. Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites. Drop big spoonful's onto greased waffle iron and cook about 4 minutes.
  5. Next, prepare the mustard seeds. Add all ingredients into a small saucepan and bring to a boil. Let the mixture simmer for 5 minutes and then remove from heat. Set aside and let cool in the fridge.
  6. Next, Prepare the fish batter. To start this recipe place rice flour, AP flour, and salt into a bowl and mix until well combined. Next slowly stream soda water into the dry ingredients while whisking constantly. Add in enough soda water that the batter becomes smooth but still slightly thick.
  7. Now place the fish in the batter and evenly coat all pieces.
  8. Next drop them into a preheated 350F deep fryer and allow to cook for 3 4 minutes.
  9. Once all components have finished cooking place the waffle down first on a large rimmed dinner plate then follow with fried Haddock, mustard seeds, and finally Maple syrup.

  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 2 egg(s), divided
  • 1/3 cup butter, melted
  • 1 cup vinegar, apple cider
  • 1/2 cup water
  • 1/4 cup sugar
  • 3 tbsp mustard seeds, yellow
  • 6 oz Empire's Treasure® Haddock Filet(s), sliced
  • 1/2 cup rice flour
  • 1/4 cup flour, all-purpose
  • as needed soda water
  • maple syrup
