Greek Avocado Dressing


  1. In a medium bowl, whisk together yogurt and vinegar until combined. Whisk Simplot Harvest Fresh Avocado Pulp into yogurt mixture in batches until combined.
  2. Stir in sugar, oregano, and thyme. Slowly whisk in olive oil until incorporated.
  3. Fold in feta, diced Simplot Harvest Fresh Avocado Slices and cucumber (if using). Cover and refrigerate 30 minutes.
  4. When ready to serve, whisk dressing to loosen; add milk if necessary to thin.


  • 3 oz cheese crumbles, feta
  • 2 oz Nature's Best Dairy® Milk
  • 1/4 tsp oregano leaves, dried

  • 6 oz Simplot® Harvest Fresh Avocados™: Avocado Pulp
  • 3 oz Simplot® Harvest Fresh Avocados™: Avocado Slices
  • 1/2 tsp sugar
  • 1/4 tsp thyme leaves, dried
  • 1 1/2 tbsp vinegar, white
  • 12 oz yogurt, Greek, plain fat-free
