Honey Chipotle Wings

Directions

  1. Purée the chipotle peppers and adobo sauce in a blender or food processor until smooth.
  2. Place the honey, puréed chipotle peppers in adobo, and lime juice into a saucepan. Whisk together until well combined. Place the saucepan over medium-low heat and bring the mixture to a gentle simmer. Cook for 8–10 minutes, stirring frequently. Do not allow the sauce to boil aggressively, as the honey can scorch. Remove the saucepan from the heat and whisk in the butter until completely melted and incorporated. Keep the sauce warm for service, stirring occasionally. If the sauce becomes too thick, add a small amount of water and whisk until it reaches a pourable consistency.
  3. Preheat the oil in the fryer to 350°F.
  4. Keep the wings frozen until ready to cook. Place the frozen wings into the fryer basket without overcrowding. Fry for approximately 6–8 minutes, or according to the manufacturer's cooking instructions. Remove the wings from the fryer and drain well. Verify the wings reach an internal temperature of 165°F.
  5. Place cooked wings into a stainless-steel mixing bowl. Pour sauce over the wings and toss the wings vigorously until they are evenly coated. For a heavier coating, add more sauce and toss again.
  6. Transfer the sauced wings to a serving basket or plate and serve immediately with a lime cut in half for garnish.

  • 1 tsp. Roma® garlic powder
  • 1/2 tsp. West Creek® kosher salt
  • 1 wedge Peak Fresh Produce® Lime(s), for garnish
