Ridgecrest® Loaded Pulled Pork Fries


  1. Heat oil in fryer to 350°F. Cook fries for 3-4 minutes until golden brown then drain on towel and hold warm.
  2. Heat butter flavored oil in sauté pan over medium high heat and cook onions for 2-3 minutes to caramelize then reserve warm.
  3. Whisk hollandaise and chipotle pepper puree then hold warm.
  4. Place fries on oven proof plate top with pulled pork and diced cheddar cheese. Melt under salamander or in convection oven set to 400°.
  5. Drizzle the top of the fries with chipotle hollandaise then sprinkle with jalapenos, caramelized onion, and green onion and serve a memory.


  • 4 oz Ridgecrest® pulled pork, warmed
  • 1 cup Bacio® White Cheddar Cheese, diced
  • 4 oz West Creek® Crinkle Cut French Fries
  • Brilliance® soy clear fry oil
  • 1/2 ea Peak Fresh Produce® Onion(s), Red, medium dice
  • 1 tsp Brilliance Butter Flavored Oil
  • 1 cup West Creek® hollandaise sauce, prepared
  • 1 1/2 tbsp Contigo Chipotle pepper, pureed
  • 1 tbsp Contigo® Sliced Jalapenos
