Thaw or prepare the corn and pepper blend according to package instructions.
To prepare the Cotija cheese sauce; combine mayonnaise, Cotija cheese, lime zest and juice, habanero pepper, cilantro, salt and sugar in a food processor bowl and purée until smooth. Transfer to a squeeze bottle and store chilled for service.
For each serving; prepare 10 oz. of lattice fries according to the package instructions. Top with 3 oz. of cheese sauce, 5 oz. corn and pepper blend, 4 oz. of chicken, sprinkle with 1 oz. of feta cheese, 2 oz. jalapeños, 1/4 cup tortilla strips and serve with a 2 oz. cup of guacamole. Garnish with cilantro and lime wedges, as desired.
