Northern Italy Loaded Fries
Directions
- Heat olive oil in a large skillet over medium high heat.
- Add mushrooms and zucchini and saute' until vegetables are cooked, but still firm.
- Stir in the garlic and season with salt and pepper. Keep warm and set aside for service.
- For each portion, prepare 8 oz. of fries according to package instructions. Season with salt.
- Place on a warmed service plate. Top with 3 fl.oz. warmed tomato sauce and 4 oz. sauteed vegetables.
- Garnish with 1/2 oz. Parmesan and 1 Tbps. fresh basil. Serve.

- 5 oz cheese, Parmesan , shaved
- 1 tsp black pepper
- 30 fl oz Roasted Tomato Sauce, warmed
- 2 tsp salt
- 28 oz zucchini, halved lengthwise, sliced
