Northern Italy Loaded Fries


  1. Heat olive oil in a large skillet over medium high heat.
  2. Add mushrooms and zucchini and saute' until vegetables are cooked, but still firm.
  3. Stir in the garlic and season with salt and pepper. Keep warm and set aside for service.
  4. For each portion, prepare 8 oz. of fries according to package instructions. Season with salt.
  5. Place on a warmed service plate. Top with 3 fl.oz. warmed tomato sauce and 4 oz. sauteed vegetables.
  6. Garnish with 1/2 oz. Parmesan and 1 Tbps. fresh basil. Serve.


  • 28 oz Cremini mushrooms, sliced
  • 1 tbsp garlic, minced
  • 1 fl oz oil, olive
  • 5 oz cheese, Parmesan , shaved
  • 1 tsp black pepper
  • 30 fl oz Roasted Tomato Sauce, warmed
  • 2 tsp salt
  • 28 oz zucchini, halved lengthwise, sliced
